Sure Kino,whenever I do Fish in the pan I fry it skin-side down for most of the cooking, and have the cooker hot enough to make the skin a bit crispy while still cooking the fish.

American style fried cheese sandwich

1. Butter two slices of bread

2. Heat up a frying pan with a little oil

3. Place one slice of bread in the pan, butter side down

4. Cover the bread with cheese

5. Place the second slice of bread on top, butter side up

6. Fry both sides until light brown

7. Enjoy with hot tea

This one is a nice pie filling or can be eaten with rice as a main dish, its spreads well on bread when its cold and makes a good solid snack.

Chicken and Chirizzo pie filling 

 

Chicken breast meat

Chirizzo Sausage

Gouda cheese

Onion chopped

Garlic

Tumeric

Milk

Flour as a thickener

 

Coat chicken breast in tumeric, add salt and pepper to taste. Set mixture aside to mature. Cook off onion and garlic in a little butter, add chirizzo sausage ( enough to add flavour but not overwhelm) cook on, then add chicken breast and a little milk, melt in a good amount of the gouda cheese. When chicken has cooked through, add flour to thicken sufficiently to pie filling consistency.
